Goat ribs with “cotto d’uva”, Cherry Tomatoes and Baby Onions

12 lamb ribs
20 Washed and peeled baby onions
12 Skinless cherry tomatoes
30 g of extra virgin olive oil
30ml of “Cotto d’uva”
Bunch of garnish ?
1 Berry of juniper
1 Clove of crushed garlic
100ml of vegetable stock
½ a glass of white wine
Salt and Pepper

Warm the oil and add the ribs and salt. Add the Bunch of Garnish, juniper berry and white wine. Simmer for 3 minutes on a moderate heat. Add the baby onions, cherry tomatoes and “Cotto d’uva”. Cook for a further 3 minutes. Serve and add some Real Italian Olive Oil on top
